Casserole


MOM'S POTATO CASSEROLE



1 lb. frozen hash browns

1 can cream of chicken soup

8 oz. sour cream

5 oz. cheddar cheese

1/2 tsp salt

1/4 tsp pepper

1/4 cup finely chopped onion

1/4 cup melted butter or margarine

TOPPING

1 cup crushed corn flakes

1/4 cup melted butter or margarine

Thaw potatoes and combine all ingredients in a large bowl, excluding the topping ingredients. Transfer combined ingredients to casserole dish. Combine and mix topping, Sprinkle with topping, bake 1 to 1 1/2 hours at 350°.


SAUSAGE & RICE



1 lb. sausage

1 small to medium onion

1 cup water

1 cup rice

1 can 14.5 oz. chopped/diced tomatoes

Brown sausage and drain, (for hotter taste, use 1/2 lb. regular and 1/2 lb. hot sausage). Chop onion. Combine prepared sausage, chopped onion, rice, water and tomatoes, salt and pepper, mix ingredients and place in casserole dish, cover and bake at 350° for 1 hour. {Live on the edge, experiment, add spices you enjoy or possibly some of your favorite cheese}
